Vinification:

  • Plot selections and vintage in green
  • Destemming and manual sorting.
  • Fermentation of 15 days for grenache, 25 days for Mourvèdre and 35 days for Syrah at regulated temperatures of 23 to 25 ° C.
  • Aging from 8 to 12 months in new barrels.

Description:

Intense and shimmering ruby ​​red color with a bouquet first on the barrel (toasted notes) releases the agitation of the intense aromas of jammy red fruit.
The well-balanced mouth is structured by woody and vanilla tannins which gives it good length. We can already enjoy this bottle or wait 3 to 5 years in the cellar. It is a wine for keeping which will accompany a leg on a spit or other dishes in sauce.  As this wine is unfiltered, decanting a few hours before serving is recommended.
