Vinification:

  • Harvested by hand in small crates
  • Each variety is vinified separately, with no added yeasts, in concrete egg-shaped tanks tronconique French oak and oval foudre
  • Only manual punch downs are used with minimal contact with air.
  • The tanks are temperature controlled for a long and gentle fermentation
  • Maceration depending on the variety from 3 to 5 weeks
  • Syrah in tronconique French oak, Grenache in Foudre ovale. Carignan et Cinsault in egg shaped concrete tanks. 18 months

Description:

This is a brooding blend of Cinsault, Carignan, Grenache, and Syrah – aged on French oak. Dusky vegetal aromas lead into an intriguing palate of spiced fruit with strong herbal influences – it’s quirky and may be an acquired taste to some but when that peppery finish comes home over the preceding “unusual” flavors – it’s a whopping success
