Harvest: The vines are cultivated without the use of insecticide or weedkiller, in organic farming certified by Ecocert. – 100% manual harvest, bunches are de-stemmed and crushed.

Vinification:

  • Fermentation for 20 to 25 days.
  • 2 manual punching down (or 1 to 0 depending on Sophie’s mood) per day, until the marchat is completely immersed. 
  • Matured in tanks at 100%. This cuvée is aged only in vats. The search for aromatic complexity and finesse of tannins corresponds to this choice.

Description:

Deep crimson. Lovely charry dark fruit on the nose but a little floral too with violets and a note of vanilla. Super-smooth and succulent on the palate, fluid and with an easy intensity. Concentration seems effortless. Long dark finish. ~ Jancis Robinson
