Harvest:
- Leaf thinning done mechanically
- Limited phytosanitary treatment to comply with sustainable agriculture
- Treatment only in case of disease
- Grape maturity control and gustatory test for each individual plot
- Grape de-stemming
Vinification:
- Aging in stainless steel vats using pneumatic press system
- Alcoholic fermentation under low controlled temperature with colling apparatus in each vat
- Racking, blending and bottling between April and September
- Additional 6 months aging in bottle before release
Alcohol content: 13%
Description:
This wine is clear, bright with a beautiful pall gold dress and green color. The nose is fresh, mineral with candied lemon and honey aromas. This is well balanced thanks to its vivacity and its minerality.
