Harvest:

  • Grass grown in every second row
  • Leaf thinning done mechanically
  • Limited phytosanitary treatment to comply with sustainable agriculture
  • Treatment only in case of disease
  • Grape maturity control and gustatory test
  • Mechanical harvesting, mostly by night to keep the temperature low
  • Grape de-stemming

Vinification:

  • Pelliculare maceration 18 to 24 hours before pressing
  • Cold soak for 15 to 20 days to extract aromas
  • Separated alcoholic fermentation of each grape in tank
  • Maturing on fine lees for at least 3 months
  • Extraction of proteins by bentonitage before assembly of the various grapes

Description:

This white Bordeaux wine is a blend of Sauvignon Blanc, Sémillon, and Muscadelle. This bright pale yellow wine is balanced on the nose between notes of yellow fruit and fresh citrus fruit. On the palate the wine is crisp, mineral with a balanced fruit intensity making it a great with lighter fish dishes and seafood. The Chateau Castenet Entre-Deux-Mers is a good example of how you can find pleasure in the white wines of Bordeaux.
